Tomato Salad (Salata Tomatim Bel Daqua)

Salata Tomatim Bel DaquaFor every South Sudanese meal, there is always chopped tomato salad on the side. And who wouldn’t want a nicely fresh looking salad next to their meal? We know
we should consume more fresh greens. With any dinner or lunch plate you want to make sure at least 1/2 your plate is vegetables.
But how many of us do that. So this is how I learnt to think that I am actually having half a plate of vegetables by putting that salad aside my meal every day to act as one.
Today we learn to make salad the South Sudanese way. Let’s move a bit from the heat and make something in a bowl without using any heat.

Offal

Salata Tomatim Bel DaquaOffal also called variety meats or organ meat refers to the internal organs and entrails of a butchered animal. Depending on the context, offal may refer to those parts of an animal carcass discarded after butchering or skinning.
Some cultures shy away from offal as food, while others use it as everyday food, or delicacies. In outh Sudan you can never miss this food in occasions it is more like a traditional cuisine. Be it a wedding ceremony, house party, baby naming ceremony just to mention but a few.
Offal is food that gives some people the shivers before cooked, I have been around such people but I also found a way to convince them that if they are not eating offal then they have no idea of what a delicacy of meat is. Just give such people a good plate of curry offal; it will shut them up quickly enough.

Red chief Lentils with Spinach

No! You haven’t! Well I have. It’s a taste to die for, it is delicious and it goes with everything from read, chapatti to ugali name it.
My mother one day made us this meal for lunch and we loved the taste of the mixture and the smell oh my better than the pizza being made next door.
